Meatless Meatloaf (Episode #7)

What You’ll Need:
4 eggs, slightly beaten (like my soul!)
1/4c butta, melted and cooled
1 pkg onion soup/dip mix
2c cottage cheese
1c chopped walnuts or pecans
3-4c whole grain cereal flakes
1t (meaning teaspoon) poultry seasoning (there’s no actual chicken in it!)

What You Do:
Mix all ingredients thoughtfully and thoroughly. Put in a well-greased loaf pan and bake 350F for about an hour. If desired, slop on some ketchup (good ketchup makes all the difference here) with 10 minutes to go. Eat.

You might want to avoid alcohol with this one if you aren’t used to meatless things. Because if you drink too much and then have to deal with this texture, you might throw up. Just sayin’.
