Lentil Salad (Episode #10)

First You’ll Need:
1 cup lentils
4 cups water
2 bay leaves
1/2 tsp. thyme
2 cloves garlic

Boil all together ’til lentils are tender. Drain. Mash garlic.

Then You’ll Need:
1/3 cup sun-dried tomatoes, minced
1/2 cup diced celery
1/2 cup red or yellow bell peppers, diced
1/4 cup minced red onion
1/2 cup chopped fresh parsley

Combine.

You’ll Also Need:
3 Tbsp. extra-virgin olive oil (EVO)
3 Tbsp. red wine vinegar
1 tsp. ground fennel
1 tsp. (rounded) Dijon
Salt and pepper

Combine all ingredients, adjust seasoning as needed. Serve hot or cold on a bed of lettuce, preferable with feta, olives, cucumbers, and cherry tomatoes. OMFG.
